We do this by listening intently when we talk to an author. Then we continually test out their voice.
Most ghostwriters have a similar process.
I put together a couple of sample pages for you to review to see what sounds like you and what doesn't. Then we do that again. And again. As many times as it takes for you to be happy. (In truth, it's usually only one or two.)
I'm trying to discover the voice you hear in your head when you have the thoughts that are going into your book.
The main cause of frustration for many authors is that, when they try to write anything themselves, it doesn't sound like them.
That's why so many authors turn to ghostwriters in the first place.
